1/2 medium seedless watermelon, cut in small wedges
1/4 cup traditional dark balsamic vinegar
1 tablespoon sugar
6-8 fresh mint leaves, chopped, with a few leaves for garnish
Combine traditional dark balsamic vinegar and sugar in a non-reactive saucepan, such as a stainless steel pan. Simmer over medium heat until thickened, stirring frequently, for about 10 minutes. Let cool to room temperature.
Slice watermelon into small wedges. Place on a serving platter or individual serving plates.
Drizzle cooled balsamic syrup over watermelon slices. Top with chopped mint, and garnish with mint leaves.
